Pepper - Hot - Nu Mex Joe E Parker Nu Mex Joe E Parker peppers have medium heat and lots of flavor. Peppers grow 6-7” long with thick flesh and walls. They mature from green to become red, but can be harvested in both green and red stages. Plants are 2.5’ tall with thick green foliage and productive yields. Sow seeds indoors ¼” deep in fertile soil and transplant seedlings when they are 2” tall and it is warm at night outside. After 65-75 days, harvest peppers when they reach desired color and size.
